Back in Rome after three intense days in Trieste working with amazing people. It is always enlightening to work with such inspiring and expert people, not only on a work level but as humans too. Blessed.✨ Lately we shared with you a bit of our roasting method, which is not so common anymore. First of all, we use wood fire: delicate and slow. It requires a lot of attention and expertise. Then we cool the coffee down with air and NOT with water as many industries do. Our roasting respects the product. Azad, forgive me but it was too funny not to post 😅 He has been working with my family since ever, he even remembers of me when I was a child playing around with coffee beans. He is like the good uncle, the one who knows you. Not a surprise the youngs among the staff call him "zio". His good qualities as a person are as many as his barista skills. Every morning when he comes this gentleman sings to me 'Oh giovinetta bella D'un poeta non disprezzate il detto!' 🙈 Andrea Chénier would be super proud of him because seriously this happens every day, it is part of the routine now and it makes me smile every time. When people ask us the differences between good coffee and bad coffee we don't know what to begin with because they are sooo many. For example, let's start from the harvest! There are two main methods : picking and stripping. Picking is a manual method that allows to select only the good and mature cherries, stripping instead is fast and uses machines that take everything from the branch. Did you know that through the picking method only 20kg of green coffee can be picked per day? This means that for a regular 60kg juta bag of coffee we need THREE days of work! Perfect summer walk: Starting from Piazza Navona stop by for a coffee. After a refreshing coffee here, take your time to visit the Pantheon and then proceed for a five minute walk until you reach the Trevi Fountain. This fountain dates back to ancient Roman times, more precisely to the construction of the Aqua Virgo Aqueduct in 19 B.C. that provided water to the Roman baths and the 1350 (!) fountains of central Rome.
